Blue Oyster Mushrooms

Crispy Garlic Blue Oysters

Blue oysters get beautifully crispy, making them perfect for quick sautés or topping bowls and pasta.

Ingredients:

  • 1/2 lb blue oyster mushrooms, torn into strips
  • 2 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • Salt & pepper
  • Optional: splash of soy sauce
  • Lemon wedge and fresh herbs

Instructions:

  1. Heat pan to medium-high. Add oil or butter.
  2. Add mushrooms in a single layer. Cook 3–4 minutes untouched.
  3. Stir and cook another 3–4 minutes until browned and crisp.
  4. Add garlic; cook 30–60 seconds.
  5. Season with salt, pepper, and soy (optional).
  6. Finish with lemon.

Lion’s Mane “Crab” Cakes

Lion’s Mane naturally shreds like crab meat—this recipe is always a customer favorite.

Ingredients:

  • 1/2 lb lion’s mane, shredded
  • 1 egg
  • 1/4 cup mayonnaise or yogurt
  • 1/2 cup breadcrumbs/crackers
  • 1–2 tbsp chopped green onion
  • 1 tsp mustard
  • 1/2 tsp Old Bay or seasoning
  • Salt & pepper
  • Oil for frying

Instructions:

  1. Sauté shredded Lion’s Mane for 5–7 minutes to remove moisture.
  2. Mix egg, mayo, breadcrumbs, onion, mustard, and seasoning in a bowl.
  3. Add mushrooms; mix until it holds. Add more crumbs if needed.
  4. Form patties.
  5. Pan-fry in a thin layer of oil 3–4 minutes per side.
  6. Serve with lemon or dipping sauce.

Ingredients:

Pioppinos bring a nutty, savory flavor that pairs perfectly with sweet, blistered cherry tomatoes.

Ingredients:

  • 1/2 lb pioppino mushrooms, trimmed
  • 8 oz pasta (spaghetti, fettuccine, linguine, etc.)
  • 2 tbsp olive oil
  • 2 cloves garlic, sliced or minced
  • 1 cup cherry tomatoes, whole or halved
  • 1/4 cup white wine or broth (optional)
  • 1–2 tbsp butter
  • Salt & pepper
  • Parmesan cheese (optional)
  • Fresh parsley, chopped

Instructions:

  1. Cook pasta according to package instructions. Reserve 1/2 cup pasta water.
  2. Heat olive oil in a large pan over medium-high heat.
  3. Add pioppino mushrooms and sauté 5–7 minutes until browned.
  4. Add the cherry tomatoes and cook another 2–3 minutes until they start to blister and soften.
  5. Add garlic and cook 30–60 seconds until fragrant.
  6. Add white wine or broth, if using, and let it simmer 1–2 minutes.
  7. Add cooked pasta + butter to the pan. Toss to coat, adding a splash of pasta water if needed to form a silky sauce.
  8. Season with salt and pepper.
  9. Finish with Parmesan and fresh parsley.

  • 2 tbsp oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt & pepper
  • Tortillas
  • Toppings: cabbage, avocado, salsa, cilantro, lime

Instructions:

  1. Cook mushrooms in oil 5–7 minutes.
  2. Add seasonings; cook 1–2 minutes.
  3. Warm tortillas.
  4. Fill with mushrooms + toppings of choice.
