Blue Oyster Mushrooms
Crispy Garlic Blue Oysters
Blue oysters get beautifully crispy, making them perfect for quick sautés or topping bowls and pasta.
Ingredients:
- 1/2 lb blue oyster mushrooms, torn into strips
- 2 tbsp olive oil or butter
- 2 cloves garlic, minced
- Salt & pepper
- Optional: splash of soy sauce
- Lemon wedge and fresh herbs
Instructions:
- Heat pan to medium-high. Add oil or butter.
- Add mushrooms in a single layer. Cook 3–4 minutes untouched.
- Stir and cook another 3–4 minutes until browned and crisp.
- Add garlic; cook 30–60 seconds.
- Season with salt, pepper, and soy (optional).
- Finish with lemon.
Lion’s Mane Mushrooms
Lion’s Mane “Crab” Cakes
Lion’s Mane naturally shreds like crab meat—this recipe is always a customer favorite.
Ingredients:
- 1/2 lb lion’s mane, shredded
- 1 egg
- 1/4 cup mayonnaise or yogurt
- 1/2 cup breadcrumbs/crackers
- 1–2 tbsp chopped green onion
- 1 tsp mustard
- 1/2 tsp Old Bay or seasoning
- Salt & pepper
- Oil for frying
Instructions:
- Sauté shredded Lion’s Mane for 5–7 minutes to remove moisture.
- Mix egg, mayo, breadcrumbs, onion, mustard, and seasoning in a bowl.
- Add mushrooms; mix until it holds. Add more crumbs if needed.
- Form patties.
- Pan-fry in a thin layer of oil 3–4 minutes per side.
- Serve with lemon or dipping sauce.
Coral Tooth
Buttered Coral Tooth on Toast
Soft, delicate texture — perfect for buttery toasts or breakfast dishes.
Ingredients:
- 1/2 lb coral tooth, torn into small pieces
- 2 tbsp butter
- 1 clove garlic (optional)
- Salt & pepper
- Toasted bread
- Optional herbs (parsley, thyme, chives)
Instructions:
- Melt butter over medium heat.
- Add coral tooth and cook 5–7 minutes.
- Add garlic for last 30 seconds.

Pioppino Garlic Butter Pasta with Cherry Tomatoes
Pioppinos bring a nutty, savory flavor that pairs perfectly with sweet, blistered cherry tomatoes.
Ingredients:
- 1/2 lb pioppino mushrooms, trimmed
- 8 oz pasta (spaghetti, fettuccine, linguine, etc.)
- 2 tbsp olive oil
- 2 cloves garlic, sliced or minced
- 1 cup cherry tomatoes, whole or halved
- 1/4 cup white wine or broth (optional)
- 1–2 tbsp butter
- Salt & pepper
- Parmesan cheese (optional)
- Fresh parsley, chopped
Instructions:
- Cook pasta according to package instructions. Reserve 1/2 cup pasta water.
- Heat olive oil in a large pan over medium-high heat.
- Add pioppino mushrooms and sauté 5–7 minutes until browned.
- Add the cherry tomatoes and cook another 2–3 minutes until they start to blister and soften.
- Add garlic and cook 30–60 seconds until fragrant.
- Add white wine or broth, if using, and let it simmer 1–2 minutes.
- Add cooked pasta + butter to the pan. Toss to coat, adding a splash of pasta water if needed to form a silky sauce.
- Season with salt and pepper.
- Finish with Parmesan and fresh parsley.

Ingredients:
- 1/2 lb chestnut mushrooms, halved

Ingredients:
- 1 bundle enoki mushrooms
- 6–8 oz noodles
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp rice vinegar
- 1–2 tsp honey (optional)
- 1–2 green onions
- Sesame seeds
Instructions:
- Cook noodles; drain.
- Sauté Enoki for 2–3 minutes.
- Mix soy, sesame oil, vinegar, and honey.
- Toss noodles with sauce, then add Enoki.
- Top with green onions & sesame.

- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- Salt & pepper
- Tortillas
- Toppings: cabbage, avocado, salsa, cilantro, lime
Instructions:
- Cook mushrooms in oil 5–7 minutes.
- Add seasonings; cook 1–2 minutes.
- Warm tortillas.
- Fill with mushrooms + toppings of choice.
